Around here, three hundred metres above sea level, the soil is packed with minerals and no pesticides are used in compliance with the Docg protocol for organic wines: copper and sulphur in moderation, manure to fertilise the soil and nothing else.
The youngest vine is one year old, the oldest twenty, but they are all exposed to the sun along the east-west axis and sheltered from the frost and cold.
The vines are tended, row by row, until the roots, which in these parts are called “ru”, reach deep down into the clay and the vines are bent using the double canopy or Sylvoz pruning systems to get the very best results at harvest time.
